Baked & Loaded Co. (formerly Big Sky Baked & Loaded) started with a simple belief: comfort food should be both delicious and memorable. What began as a dream to bring creative, loaded baked potatoes to the streets of Billings has grown into a beloved food truck and catering company that serves thousands of happy customers each year.

Our menu is inspired by classic comfort food with a creative twist. Every potato is made to fork tender perfection and loaded with premium toppings — from savory pulled pork with sweet & tangy BBQ to our famous chicken bacon ranch made with our signature homemade ranch. Pair that with our signature loaded, dirty sodas, and you've got a meal that hits different.

But we're more than just food. We're about community. From daily pop ups to local events to weddings and corporate gatherings, we've been honored to be part of countless celebrations across Montana. Each event is a chance to connect, share smiles, and spread a little potato-powered joy.

And now, with the launch of our Emotional Support Potato™ plush package, we're bringing that same warmth and humor to people everywhere — even when they're not hungry (though let's be honest, you're probably hungry).

Kate Mysse is the heart and vision behind Baked & Loaded Co.—a dream built on faith, family, and a lifelong love for comfort food. A proud Montana native, Kate grew up surrounded by community, hard work, and the entrepreneurial spirit she learned from her late father, whose passion for building and creating continues to inspire her every day.

After graduating from the University of Wyoming, Kate built a career in marketing and spent time living in Texas, where she fell in love with the vibrant Southern food-truck scene. What began as inspiration soon became a calling, and in 2022, she brought Baked & Loaded Co. to life. The brand quickly captured Montana’s heart with its signature loaded baked potatoes and joyful, community-centered personality.

Kate and Baked & Loaded Co. have been featured on local Billings news outlets such as Q2, as well as other regional networks and recognized for her entrepreneurial creativity through UW. In 2022 she was selected as a competitor on Season 5 of the entrepreneurial competition TV show The Blox—a milestone that reflects her drive to grow not just a business, but a meaningful brand.

Rooted deeply in her faith, Kate accredits every step of her journey as a blessing from God, while being strengthened by the support of her family, friends, and the community she proudly serves.
